Simple and Delicious: Summer Pepper Salad

Serves 4


INGREDIENTS:
1 tablespoon balsamic vinegar
1 tablespoon rice vinegar
4 tablespoons extra-virgin olive oil
Salt and pepper, to taste
1/2 sweet onion, very thinly sliced
1 pound fully ripe red, orange, chocolate, or white peppers, seeds and membranes removed, sliced cross-wise in circles
1 Lavender bell pepper, seeds and membranes removed, cut in wedges for garnish


PREPARATION:

1. Prepare vinaigrette: In a bowl, add the two vinegars and whisk in the olive oil. Add salt and pepper and place the onion in the bottom of bowl. Let onion sit in vinaigrette for as long as possible (you can actually prepare this part earlier in the day).
2. Add sliced peppers and toss just before serving. Add Lavender bell pepper at the last minute for beauty and color. (This is our kid’s favorite!)
