Apple, Dried Cherry and Walnut Salad with Maple Dressing

Adapted from What San Francisco Families Eat!: Favorite Family Recipes from Presidio Hill School in San Francisco

Serves 4


INGREDIENTS:

1/4 cup mayonnaise
1/4 cup pure maple syrup
3 tablespoons champagne vinegar or other white wine vinegar
2 teaspoons sugar
1/2 cup vegetable oil
Salt and pepper, to taste
5 ounces mixed baby greens (about 10 cups lightly packed), washed and dried
2 Granny Smith apples (or another tart apple variety), peeled, cored, cut into matchstick-size strips
1/2 cup dried tart cherries
1/2 cup chopped walnuts, divided


PREPARATION:

1. Prepare dressing: whisk mayonnaise, maple syrup, vinegar, and sugar in a medium bowl to blend. Gradually whisk in oil until mixture thickens slightly. Season to taste with salt and pepper, cover and refrigerate. Dressing can be prepared up to 3 days in advance; re-whisk before using.

2. Combine greens, apples, cherries, and 1/4 cup walnuts in a large bowl and toss with enough dressing to lightly coat. Divide salad equally among 4 plates, sprinkle each with the remaining walnuts and serve.
