Candied Orange Peel

Serves 8


INGREDIENTS:
4 Oranges
2 cups Sugar
1 cup Water
2 teaspoons Saffron water

PREPARATION:
With a potato peeler remove the zest only from the oranges. Julienne the pieces of zest and blanch 3 times in 8 cups of water draining after each. Dissolve 2 cups sugar in 1 cup of water over low heat. Add orange peel and simmer for 15 to 20 minutes. Add saffron water and stir well. Cool and refrigerate for future use.

Candied orange peel can be a delicious addition to rice dishes, baked goods, etc.
