Date Pinwheel Cookies


INGREDIENTS:
Filling:
1 pound fresh dates, pitted and chopped
1 cup water
½ cup walnuts, chopped

Dough:
1 teaspoon baking soda
3 3/4 cups all purpose flour or unbleached white flour
½ teaspoon salt
1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs


PREPARATION:
Preheat oven to 375 degrees.

  1. Make the filling by combining the dates, water and walnuts in a two quart saucepan and boiling until the dates are very soft. Mix well until the mixture forms a thick paste. Set paste aside to cool.
  2. Sift baking soda, flour, and salt together into a bowl and set aside.
  3. In a separate bowl with a hand held mixer or in the bowl of an electric mixer cream butter, sugar, and brown sugar together.
  4. Add the eggs one at a time to the butter and sugar mixture and then slowly mix in the sifted flour and baking soda. Form the dough into three balls.
  5. Roll each ball of dough into rectangles about ¼ inch thick. Spread with the date filling and roll as a jelly-roll. Chill one hour. Slice and bake on a cookie sheet for 10-15 minutes. Cut thicker slices for chewy cookies, thinner for crispy cookies. Yield depends on thickness of cookie.
