Date Pinwheel Cookies
INGREDIENTS:
Filling:
1 pound fresh dates, pitted and chopped
1 cup water
½ cup walnuts, chopped
Dough:
1 teaspoon baking soda
3 3/4 cups all purpose flour or unbleached white flour
½ teaspoon salt
1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
PREPARATION:
Preheat oven to 375 degrees.
- Make the filling by combining the dates, water and walnuts in a two quart saucepan and boiling until the dates are very soft. Mix well until the mixture forms a thick paste. Set paste aside to cool.
- Sift baking soda, flour, and salt together into a bowl and set aside.
- In a separate bowl with a hand held mixer or in the bowl of an electric mixer cream butter, sugar, and brown sugar together.
- Add the eggs one at a time to the butter and sugar mixture and then slowly mix in the sifted flour and baking soda. Form the dough into three balls.
- Roll each ball of dough into rectangles about ¼ inch thick. Spread with the date filling and roll as a jelly-roll. Chill one hour. Slice and bake on a cookie sheet for 10-15 minutes. Cut thicker slices for chewy cookies, thinner for crispy cookies. Yield depends on thickness of cookie.
