Serves 8


INGREDIENTS:

2-3 leeks, washed thoroughly
1 clove garlic, minced
1 teaspoon ginger, minced
Olive oil
4 pears, peeled and halved
8 ounces fresh goat cheese

Mixed salad greens


PREPARATION:

  1. Preheat oven to 350 degrees.

  2. Chop leeks finely. Sauté leeks with garlic and ginger in olive oil until softened and just before they turn golden.

  3. In a lightly oiled casserole dish, place pears cut side up.

  4. Fill center with goat cheese and top with leek mixture.

  5. Bake in oven for 20 minutes until pears soften, warmed throughout.

  6. Serve on a bed of greens as a first course or use as a side dish
