Sorrel Salad

This recipe was created for CUESA's Food Wise Booth on October 11, 2011.

INGREDIENTS

2 limes, zested and juiced
2-3 shallots, finely minced
Small glug of champagne vinegar
3 tablespoons goat cheese
3 tablespoons olive oil
1 bunch of sorrel
Handful of arugula
1 apple, sliced thinly
1 bunch chives, minced
Salt and pepper to taste


PREPARATION

For the Vinaigrette
In a bowl combine the lime zest and juice. Add minced shallot and champagne vinegar. Thin out the goat cheese with olive oil. Add to lime-shallot mixture.

For the Salad
In a bowl combine sorrel leaves, arugula, and sliced apple. Toss with vinaigrette, adding salt and pepper to taste. Garnish with minced chives.
