ABOUT: On their honeymoon, Joel and Naomi traveled through Italy, France and Spain on a gastronomic tour. They were inspired by both the traditional wood-fired pizzas and the innovative mobile food vendors at the farmer’s markets there. In an effort to combine those two elements, they mounted a Neapolitan wood-fired oven to a custom-built trailer that can easily be transported to farmer’s markets and events.

SOURCING: Pizza Politana uses Giusto’s organic flour, milled in California, and Napa Valley olive oil to make the dough. The toppings on their pizzas are from the local artisan producers from the various farmer’s markets where they appear: Fra’mani and Fatted Calf cured meats, Cowgirl Creamery cheeses, and seasonal vegetables from farms such as Dirty Girl, Star Route and County Line Harvest.

FUN FACT: Pizza Politana keeps their ovens at 800 degrees while they're making pizzas, meaning each pie only takes around three minutes to bake.
