Blueberry and Peach Cobbler
This recipe comes from the Literacy for Environmental Justice Good Neighbor Program's Healthy Community Cookbook.
1 cup plus ¼ cup all purpose flour
1 cup sugar
½ cup light brown sugar
¼ teaspoon salt
½ teaspoon cinnamon
½ cup light butter
2 cups freshly sliced peaches
2 cups blueberries
1 tablespoon lemon juice
1 teaspoon lemon zest
1. Pre heat the oven to 350˚.
2. Combine I cup flour, brown sugar, salt and cinnamon in a bowl, then cut in the butter with two knives until the texture resembles corn meal. You can also combine all of the ingredients in the bowl of a food processor and pulse 4-6 times to cut in the butter.
4. In a separate bowl combine the peaches, blueberries, lemon juice, lemon peal, white sugar and ¼ cup of flour.
5. Spoon fruit mixture into a greased 9- inch square baking dish.
6. Sprinkle the flour mixture from step 2 over the fruit, cover with foil and bake for 15 minutes. Then remove the foil and bake for another 35 to 45 minutes.
