Cress Pesto
5 cups cress
½ cup parsley
2 clove s garlic
½ lemon, or more to taste
1 cup olive oil, or more to taste
1 cup parmesan cheese
salt and pepper, to taste
1. Mix cress, parsley, and garlic in food processor (or with a mortar and pestle).
2. Add lemon juice and slowly drizzle in olive oil while pulsing food processor (or mixing with mortar and pestle)
3. Stir in cheese and season with salt and pepper.
Spread on top of bruschetta, mix with cooked pasta, or stir into a soup.
